As it gets colder and with cold season around the corner, what better way to stay warm and cold-free than with some lemon ginger tea!
Ingredients
Makes one 13-oz jar
1 lemon
3/4 cup honey
1 1/2 tsp ginger
1. Slice up the lemon into thin slices.
2. Grate about 1 1/2 tsp of ginger. (Feel free to adjust to taste!)
3. Arrange the lemon slices one layer at a time into a *sterilized jam jar. Drizzle honey into each layer and add a bit of the ginger you just grated. Mix thoroughly so that all the lemon slices are covered in honey and all the ginger is evenly distributed.
4. Repeat with each layer until all the lemon slices, honey, and ginger are in the jar.
5. Cover and let the mixture stand in the fridge for a few days or until needed.
6. To make the tea, add a tablespoon of the "marmalade" to a cup of hot water (or ice water!) and stir until the syrup is dissolved. (The lemon rind should be sweet enough to eat at this point!)
