Chinese New Year Special: Princess Potato's Green Tea Noodle Stir Fry Surprise

Noodles and dumplings are staples for Lunar New Year celebrations everywhere.
Here's our take on traditional New Year noodle dishes that is simple and budget-friendly. Sure, while it's not the most beautiful of dishes, it'll taste great with the dumplings you will have made (or bought) for New Year's dinner.
Ingredients
1 bundle of green tea soba noodles (cha soba)
1 cup sliced mushrooms (any variety)
1 sausage (any variety)
1 stalk of green onions
1 stem of celery
¼ white onion
½ cup shredded cabbage
1 clove garlic
Not shown: soy sauce, Hoisin sauce, sesame oil, butter, egg
1. Slice up your garlic and chop your onions into long strips. Then add some sesame oil to your pan along with the garlic and onions. Heat until almost transparent and golden.
2. Slice up your mushrooms, celery, green onions, and sausage. Drizzle some more oil into your pan and add your sliced ingredients along with the cabbage to your pan as well. Cook until everything is tender and heated through. While this is happening, you will want to boil your noodles according to the package instructions and then run the noodles under cold water to stop the cooking process.
3. Now you can add your noodles to your stir fried goodness~ Season your noodles with the soy sauce, Hoisin sauce, and some butter (or more sesame oil if you'd like). Stir until well combined.
Now comes the fun part! Drop an egg into your hot pan and vigorously stir it into your noodles. You should get little eggy bits in your stir fry that will be very similar to the picture below (the yellow bits are the egg).

And you're done! Enjoy this awesome stir fry with your favorite jiaozi (dumplings)~
